I am fighting a speeding ticket on a matter of principle.?

I had an opportunity before the hearing officer to pay a fine, keep my driving record clean for a year and the ticket would be off my record. I turned it down. I am finding out that I do not have a chance in court to win against a traffic officer. I cannot go back to the hearing officer. What are my options? Ilive in MN.
